2. Production Process
-
Vineyard Selection: The vineyards are located around Roseto degli Abruzzi and other production areas in Abruzzo, along Italy’s Adriatic coast. The vines grow in clay and limestone soils and are trained using Guyot and pergola systems.
-
Must Extraction: Approximately 10% of the must is extracted as part of the winemaking process to help concentrate the remaining juice.
-
Fermentation: Selected Fantini yeasts are used. Fermentation begins at a low temperature to encourage polyphenol extraction and color development, followed by temperature control at approximately 27°C.
-
Malolactic Fermentation: This process helps develop a smoother, more rounded palate.
-
Oak Aging: The wine matures in American oak barriques for approximately six months, contributing complexity and structure.
